Jalapeno Red Bean Salsa

I love salsa. It's such an easy and healthy snack. I wanted to make a salsa that is low in calories but more filling than the standard salsa and can be enjoyed without chips. Basically, a meal in itself. If you like your food spicy try the Jalapeño Red Bean Salsa.

Jalapeño Red Bean Salsa

Ingredients:

  • 2 chopped tomatoes

  • 1 cup red beans (I used dried beans)

  • 1 cup corn

  • 1 cup garbanzo beans

  • 6 tablespoons jalapeno dressing ( I used two single servings of Naturally Fresh Dressing cups)

  • 1/4 cup chopped onion

  • 2 garlic cloves chopped

  • 1/4 cup chopped green onions

  • 1/2 cup chopped green pepper

  • cayenne pepper (optional)

  • salt/pepper (optional)



Directions:

  1. If using dry beans soak for hours and cook according to the package.

  2. Mix all ingredients except for salad dressing

  3. Add 3 tablespoons of dressing and stir

  4. Add other 3 tablespoons and stir

  5. Marinate overnight if time permitting. If not serve with chips


makes 9-12 servings at 1/2 cup

Tips:

  • This can be enjoyed without chips

  • If you want more per serving but with less fat, try using Greek yogurt instead of salad dressing and use fresh jalapeno. Using jalapeno dressing added a total of 360 calories and 36g fat. That's why there are 9 servings. It brought the fat grams down to 5g per serving

  • Let it marinate overnight, it tastes even spicier
