This recipe is super easy and inexpensive with fancy flair and hearty taste! Purchase a roasted chicken. Approximate 1/2 pound per person. Rinse and pat dry. The chicken needs to be bone dry, so it will roast, not steam.
Add veggies (onions and carrots) and red potatoes or rice. Add one cup of chicken stock or a chicken bouillon cube dissolved in water.
Place all ingredients in a roasting dish or a baking dish. Bake at 425 for approximately 50-60 minutes - until the meat thermometer reaches 175 degrees. Halfway through, rotate the veggies.
Remove from the oven once the thermometer reaches 175 degrees F. Let cool. Slice and serve.
