Zucchini Crescent Pie

Cook and stir 10 min.
4 Cups zucchini,sliced
1/4 Cup onion,chopped
1/4 Cup butter
Add:
2 T.parsley
1/2 t salt and pepper
1/2 t basil
1/4 t oregano
Beat in small bowl and add to above mix
2 eggs
Add to above mix
8 oz. Mozzarella or Jack cheese,grated (sometimes I add cheddar also)
Place zucchini mix in pie shell with 1T mustard spread on bottom of crust.(use crescent rolls or biscuit rolls flattened for crust or my easy crust mix,see below)
Bake @ 375 for 20 min. or til set in center
Easy No roll Pie Crust
1 1/2 Cups Flour,1 t salt 1 1/2 t sugar
1/2 Cup oil plus 2 T milk-mix oil and milk then add to flour mixture,simply press into a pie plate.Makes a great light crust
