Strawberry Flavored Waffles with Coconut Syrup

We are a waffle loving family (everyone except the hubby). The other day we tried making chocolate cake waffles from HERE.  I of course forgot to take a picture of the yumminess.  We topped ours with some chocolate or vanilla ice cream.  So the next day the girls requested waffles again.  Of course they were wanting the chocolate cake ones and that wasn't going to happen for breakfast.  So I decided to try a little experiment.   Well to say the least they were devoured!  Even by my picky 3 year old.
Strawberry Waffles
1 egg separated
1 cup milk
1/4 cup sugar
2 tsp baking powder
1/3 cup oil
1/2 tsp vanilla
1 tsp strawberry flavoring
1 cup flour

Beat the egg whites until fluffy.  Mix together the egg yolk, milk, sugar, baking powder, oil, vanilla, and strawberry flavoring.  Add the flour.  Then fold in the egg whites to make nice and fluffy waffles.  Cook on your waffle iron or on a griddle for pancakes.




Coconut Syrup
1 cup sugar
1 tbsp cornstarch
Mix together so the cornstarch won't make lumps
Stir in 1 cup milk.  Cook in the microwave or on the stove until boiling (microwave about 8 minutes)  Watch it to make sure it doesn't boil over.  Then add 1 tsp vanilla and a few drops of coconut extract.  Cook again for a minute or on the stove or 3-5 minutes in the microwave until it starts to thicken.
